Yes, you can remove/delete the picklist field from One Click Update after configuration.

Steps to remove the field:

Go to the About One Click Update tab in the one click update app.
Go to step 1 > Click on Recycle Bin icon in the Action column for the field which you want to remove.
After clicking on Recycle Bin icon it opens PopUp - Click on the OK button in PopUp.
Now you can see the field is successfully removed.
