User can, you can hide existing Cloud Documents from the Lightning component by following these steps:

Go to the specific record where you've added the "Drag Drop & Upload Files to Amazon S3" Lightning Component.
Click on the gear icon and select "Edit Page."

Find the "Drag Drop & Upload Files to Amazon S3" component within the page editor.
Within the component settings, locate the attribute named "Hide Existing Cloud Documents."
Tick the checkbox next to "Hide Existing Cloud Documents."
Click on "Save" to preserve the changes made.
With these settings in place, Cloud Documents will be hidden from the Drag Drop & Upload Files to Amazon S3 Lightning Component.
